CINNAMON CRUNCH MUFFIN AND CRUMB CAKE MIX GF Treats!

I was sent these for a non bias review and let me say they are awesome!!!  Here is their website to check them out http://www.ardennefarm.com/

These are so easy to make following the instructions of course.  Those that know me know that is very hard for me to do since I write recipes all the time!  They have these little cinnamon pockets of heaven!  

So in all seriousness, these cupcakes were light and moist. They had a great crumb more like a coffeecake but not as dense.  My crumb topping melted into the cupcake like a sugar crackle but honestly that was my fault my butter was the wrong temperature, but truthfully it was great regardless.  I haven't found many packages worth purchasing becuase if you don't eat them right away they typically are so hard it is not worth it.  
Here is how cute they were in my oven!  This is the result of great ingredients, no preservatives and no crap!

Can you see the those little pockets of heaven in there?  They are amazing, not sure what they were exactly but they make these great!

Our Gluten Free Cinnamon Crunch Muffin and Crumb Cake mix makes delicate and tender cinnamon muffins or crumb cake with crunchy cinnamon streusel topping made from turbinado sugar.

No Artificial Colors, Flavors or Preservatives

Makes 12 medium (or 6 large) muffins or 16 pieces of crumb cake

How to Make:

Preheat the oven to 400°F. Place 12 paper baking cups in a medium muffin pan (or 6 baking cups if using a large muffin pan).

Add contents of topping mix packet to a small bowl. Add 2 teaspoons of butter* (softened) and combine until crumbly. Set aside.

Combine muffin mix, 1/3 cup of oil, 2 large eggs* (lightly beaten) and 2/3 cup of milk* to a large bowl. Using a large spoon or spatula, combine until just incorporated.

Divide batter among muffin cups.

Sprinkle crumb topping evenly over muffin batter.

Bake for 15-18 minutes for medium muffins or 20-22 minutes for large muffins.

Cool muffins in pans.

For crumb cake, preheat the oven to 400°F. Grease the bottom only of an 8-inch square pan. Pour batter into prepared pan and sprinkle crumb topping evenly over batter. Bake for 23 minutes.

 

*Dairy and eggs can be substituted with appropriate replacers according to your dietary needs.

 

Ingredients: Muffin Mix: Gluten Free Flour Blend (White Rice Flour, Brown Rice Flour, Potato Starch, Tapioca Flour), Cane Sugar, Non GMO Aluminum Free Baking Powder (Baking Soda, Sodium Acid Pyrophosphate, Corn Starch, Monocalcium Phosphate), Cinnamon, Xanthan Gum, Natural Vanilla. Crunch Topping: Turbinado Sugar, White Rice Flour, Brown Rice Flour, Cinnamon.



See the crackle??  That is the best part!  I ate these for breakfast all week long!  I even fought some kids for them ;O)
